POTATO
PEEL POWDER FOR DIABETICS

Abstract
Pottatoes (Solanum tuberosum L.) are one of the most
important staple crops for human consumption, together with wheat, rice and
corn. Indonesia including potato producer that could be considered quite a lot.
High carbohydrate source that makes the potato is widely used as an alternative
to rice and corn. Besides potatoes also contain a small amount of glucose
compared with rice and contain a lot of pottasium. Glucose content resulted in
little fits potatoes consumed by diabetics .In little glucose content, the
potato also has a high carbohydrate when consumed can lead fuller longer .Most
people consume potatoes to peel the peel, without us knowing the actual peel of
the potato also contains a lot vitamin. If the peel is not used then it will be
a loss, because the nutrients contained in them can be utilized. For that
reason the authors tried to design a product powdered potato peels to be used
as a beverage for diabetics. The concept powdered potato peels are made for
diabetics, where diabetics usually have difficulty in choosing foods and
beverages to be consumed. For that reason also the author tried to make a new
product concept that can help people with diabetes in order to have another
menu when going to consume foods that correspond to the recommended.
Background
Potato (Solanum
tuberosum L) is tuber which has
oval shape. Yellow color makes it easy to identify potato. From past to the present, a lot of people
who like to eat potatoes. In addition to use for a side dish, potatoes are also
widely used to substitute for rice. This is because the calorie and nutrient
content of potatoes are evenly matched. That is composing of carbohydrates,
proteins, essential amino acid, B vitamins (thiamin, niacin, and B6 vitamins),
c vitamins and minerals. The high content of carbohydrates causes potato
commonly known as food producing materials that can replace carbohydrates other
than rice, wheat and corn. potato
are widely used
by some certain circles as diabetic and diet, is
undergoing because of the sugar contained in
the potato is low (hasni et al,2009). The potato is the
world's fourth-largest source of carbs after wheat,
rice and corn. In addition to the carbohydrate, potato also
contains amino acids, and some vitamins, such
as vitamin a, vitamin b, vitamin c. vitamin c on
potatoes may be insufficient half body needs per
day for adults and
higher compared to rice and wheat. The content
of amino acid in the potato as well balanced, so it is very good for health (kusmana and basuki 2004 in
helmi and tarkus 2014). Low sugar content compared to rice made the potato is
widely used as an alternative food for diabetics. Diabetes Mellitus (DM) is a
type of disease caused by decreasing of insulin hormone produced by pancreas
gland. Usually, treatment of diabetes with controlling
weight, regulate food or diet, exercise and pharmacological treatment with
drugs. But other treatments with alternative therapies using medicinal herbs
(mirza, 2009 in Nurul and Sandu). Not just potato’s meat, potato
peels also content nutrition, which amount is same. Because the potato peels is
often discarded, then this time the potato peels will be utilized for food
which content of carbohydrate but low in sugar for diabetics. Livestrong foundation
explain that potato peel contain a lot of fiber, pottasium, vitamin c. Fiber offers several health advantages. Fiber keeps
us feeling full longer, helping us to maintain or reduce weight. It also lowers
blood cholesterol levels to reduce the risk of heart disease and promotes a
healthy digestive tract. Potatoes contain 2 g fiber, the majority of which can
be found in the peel. Adults should try to consume 14 g fiber per 1,000
calories. Eating one medium potato with the peel provides 8 percent of the
recommended daily intake. Potatoes,
including the peel, are an excellent source of potassium, one of the essential
minerals. The body needs potassium to support the normal function of all cells,
muscles and organs. Potassium helps to keep the fluid inside and outside of
cells balanced, transmits nerve signals to aid in muscle contractions and helps
the heart beat rhythmically. Because potatoes grow underground, the peel
absorbs many minerals, such as potassium, from the soil. One potato provides
620 mg potassium, a significant contribution toward the 4,700 mg daily intake
recommended. In addition to
minerals, potatoes and potato peels also provide essential vitamins. One potato
eaten with the peel provides 45 percent of the recommended daily value of
vitamin C. The human body requires vitamin C to support a healthy immune
system, for the production of collagen needed to build connective tissues and
bones and to protect cells against damage caused by harmful atoms produced as a
result of chemical reactions in the body.
Methods
The
step to get potato’s powder is:
Preparing
some of potatoes, then washed out with vegetable cleanse to break of bacteria
and muck. Because if we didn’t washed with vegetable cleanse it can make the
bacteria keep stay at the potato. Only then, poaching some of
potatoes into boiling water. Wait for 2 up to 5 minute. Prepare
a bowl which contain of cold water. The cold water use to decreasing the temperatur of
potato. After cooked, moved it to bowl and wait until the
temperature decrease. Raise the potato and pull the potato peels
from two sides, the potato will separate from the peels. Dry the potato peels
in the sun during 2 up to 5 days until dry. Blend the potato peels with blender
until become powder. Take the powder and pour into a glass which contain of
water, stir into mixed.
Explanation
in
the manufacture of powdered potato product is needed tools and materials to be
used, such as a few pieces of potato, cold water, ice cubes, washing soap
vegetables, boiling water, bowls, blender, glass. Stage to get the potato peels
using the following method: set up around 10 pieces of potato, then wash it off
with soap special washing vegetables. Vegetable detergent is used to kill
bacteria and germs that stick to the peel of potatoes. Because if there are
germs that stick to the peel to be harmful to health, therefore washing the
potatoes with a special soap is indispensable. Furthermore, the water heats up
to boiling water, this water is used to boil potatoes. Boiled potatoes goal is
that the peel is separated from potatoes. Then put the potatoes in boiling
water for 2 to 5 minutes. Time used to boil potatoes should not be too long
because it will cause the potatoes destroyed, if not destroyed, the peel can be
peeled potatoes. After 2 to 5 minutes later take the potatoes and put them into
a bowl of ice water, it aims to lower the temperature of the potatoes to return
to normal temperature. So that at the time of going to peel the peel does not
feel hot. Next take the potatoes out of the bowl. Hold the potato with two

Conclution
Based
on the results of a description of the potato peel, that the peel of potato
contains a lot of vitamins, carbohydrates, high pottasium and less glucose. At
least the glucose content and pottasium can be made highly refined new products
suitable to be consumed by diabetics melitus. this new products also make diabetics have other
alternative foods that are also compatible with the condition of the body.
Besides a little glucose content and high pottasium, the potato also has a high
carbohydrate when consumed can lead fuller longer.
